Looking for specific Sheepshead Recipe

Year's ago I had some sheepshead that was cooked to a crab like, lobster texture and flavor. Does anyone have the recipe for this method?

Poach with a little bit of crab boil in the water

My friends clean them then smoke them low and slow. Then they just pick the fish and pull it apart getting the bones out. Make dips and wraps.
