I like the red beans suggestions and the gumbo.

With the cool weather this weekend, I may opt for the gumbo.

1. Remove from casing.
2. Mix with 1 lb. fresh ground chuck.
3. Form into 1/3 lb. patties.
4. Fire up grill.
5. Open a beer . . .

You see where I'm going with this ?

Chop it up and add it with some sharp cheddar cheese, finely chopped onions and jalapenos to your favorite cornbread recipe or mix.

cook a chicken in a gravy, slice your andouille into rounds and throw it in the pot.
