Any vinegar in a a soup/stew/gumbo sets off the flavors. Not a lot. Just before serving.

Yeah, white vinegar. Balsamic is weird imo.

I agree.

Also like the Sicilian Flag brand.

I love the Flag. Sometimes, I have a difficult time finding it. Langenstein's normally has it and Rouse's sometimes has it.

I also like Partanna. Have no idea of the quality, but it tastes good.

And there is no such thing as white balsamic.

Ak-chew-ally, yes there is. You are aware that most high quality BVs include Trebianno grapes, a white grape varietal, right?

The wbv process exclusively uses these grapes that are cooked at cooler temperatures & aged for shorter durations to prevent dark coloration. The result is white balsamic vinegar. Now I don't think WBV has a DOP but that doesn't mean it doesn't exist.

No, it doesn't exist bc it isnt "balsamic" unless its cooked down, aged, tasted and tested through government. Yes Trebbiano is a white grape that makes the "balsamic" but when you sell it as raw vinegar its just white wine vinegar. There is no such thing as white balsamic vinegar. Its just white wine vinegar. The place I worked at what pretty adamant about it. They've only been making balsamic for like 200 years.
