Let's talk about burners

I cook a lot of jambalaya. I'm about to purchase a 15 gallon setup. Now I'm trying to decide on the burner. My 5 gallon burner looks like the left in the image below. Is there any benefit to the burner on the right. I see these more and more now and I honestly have no idea if they are better or worse or worth a shite at all. Any opinions would be greatly appreciated.

2 good points though. Any negatives other than the price?

I have the burner on the right. It is light and easy to carry. The only thing that I did to modify my aluminum burner is round off the sharp edges on the flaps where the pot sits. I have always said when I upgrade my pot from my 15 to a 20 I would get the burner on the left. No reason just something different. I do like the fact I can slide the rods and cook in my Dutch oven on the same burner when not using my jambalaya pot. I think they are both good burners.

Thanks Nola. That helps. I love my traditional burner. Like you I wouldn’t mind mixing it up but just wasn’t sure if it didn’t block wind as well or anything crazy like that.

I have the set up on the right and love it. I’m hard on equipment, and it’s tough as nails. I like the 2 rods where you can put smaller pots on and cook with the rig.

What store was this picture taken in? My aluminum burner was one of the originals with just legs no wheels.

Picture is from galvez hardware.

The 5 gallon I have now is from R&R. The problem with him is he takes forever and in this case I can actually get a better deal on an aluminum setup from somewhere else. Which is kind of why I’m asking the question. I’m really trying to decide if I go back to R&R for exactly what I have but in a 15 or if it’s worth it to get the aluminum. Just based on what people have said I think for a burner that size the aluminum may be worth it just for the weight.

I don't really have a hookup. You just can't buy locally around Gonzales. Unfortunately, they're real proud of their stuff. Buddy of mine works out near Nola and a hardware store out there has this setup:

15 Gallon Aluminum "Roll Around" Combo
Includes the following:
Pot w/ Lid and Lifting Hooks--Aluminum Stand w/ Low Pressure Burner--30psi H.P. Regulator and Propane Hose--Stainless Steel Paddle.

For reference, stores around here want $749 for the just the pot, lid and burner.

This may be a stupid question but I figured this thread it a good place to put it.

How do you know the capacity of a Jambalaya pot? I had several pots given to me that need to be cleaned up and reseasoned. I want to get a burner (or 2) and lid but don't know what size to buy. I have measured them by filling them with water but the sizes seem odd:

12g cast aluminum, 13g cast iron, 11g cast iron, 15g cast iron, and 28g cast iron

Would the burner on the left accommodate a few sizes with the flared top? Any help or advice would be appreciated.
