you and I both. Nevertheless, I´ve made all herein, but I´ve never cut a ´cochinillo´with a plate like they do in Segovia. Not a very good photo by the way, but it does rather emphatically illustrate the tenderness of the meat. That photo is not good because that cochinillo ought be much crispier on the outside. Much more.
