Lemon Oil in Crawfish boil? Isn’t this Tony’s secret?

Do it. Put it in while it's soaking, not pre-boil

Haven't used this brand but when I do get some I add it after I turn the fire off for the soak, not during the boil.

They also clean them really well. That helps a lot. If you have a muddy flav with lemon oil on top, it’s not that great.

I have a big Meyer Lemon tree, I pick the lemons and freeze the juice into cubes. I throw this in at the end of the boil to cool down the pot instead of using plain water.

I also use cut up lemons before the crawfish go in, but find the lemon cubes give things a nice finish.

I’ve heard of some places using this or country time lemonade. The lemonade is water soluble while the lemon oil is not.

I don't know that Tony's does this. Sammy's uses a whole lot of concentrated lemon in their boil.

If you have dirty crawfish, concentrated lemon can brighten them up for aesthetic purposes. I don't see how lemon oil could hurt anything.

Not much of secret, the preferred method in Chalmette. Go to Todays Ketch. Crawfish will make you pucker. Not a fan of that stuff.

We throw in 2-3 cans of frozen lemonade concentrate during the soak. Don’t know if it really makes a difference but figure it couldn’t hurt.
