Left Duck in the sink overnight

I think i know the answer to this, just want to get confirmation.

Bought a frozen duck from the grocery store for my smoked duck and oyster gumbo i'm making tomorrow. Well when i got home from work, i put the duck in the sink in some cold water. I was going to put it in the fridge before i went to bed, but forgot about it.

Woke up this morning, and the duck was still there, in it's wrapping, in the cold water. Water temp was about 59/60 degrees. I plan to toss it when i get home and go pick up another one, unless someone can convince me it's ok to eat.

What temp was the duck itself?

I'd probably still eat it, but I like to live dangerously.

Was the duck vacuum sealed? What’s the IT temp of the duck?

Poultry is the worst raw food to keep out. Very bad bacteria starts to form after 40F.

I personally throw away regardless.

Unknown, but 8+ hours of 60 degree water leads me to believe it's probably in the 50s/60s.

I'm going to be doing this more than likely. Now i have to defrost another damn duck... Thanks for the info people.

I would have thrown it back into the fridge until I was ready to prep it for smoking. Would have used especially since you were going to "cook" it twice.

If you were going to cook it rare I might think about throwing it out, but for a dang gumbo I'd be using it and not thinking twice. Just bring the duck meat up to a boil to kill anything bad and move on.

Seriously, it's like 10 hours. We didn't have refrigeration until 100 years ago and somehow survived.

Not to mention, it likely wasn't even thawed out for more than 5-6 hours. My wife leaves chicken in the sink to thaw all day. Not the best idea, but if you cook it through there's really no issues.

More than likely not even that long and the water temp was likely sub 40 most of the time.

Theres an old man at the front of our street who tells stories about this. When they were kids they stored meat in a big vat of hog lard. When they wanted to eat some they would scoop some out cook it. He still jars all his vegetales as well. Hes in his last 80s early 90s.


I would eat the duck.
