The lines stay clean. I have one line dedicated to sparkling water and it's never had beer in that line. I add the lime when I serve, so it's just regular old water in the keg.

I use a perrier water profile. Ca 160, Chloride 19, Sulfate 30, Na 9.3, Mg 4.3, Carbonate 366. Pressure is set and left around 25, which sometimes makes serving fun. I could probably do with a longer line on that keg to reduce the force at the tap.

If you're like me, once you do it you'll kick yourself for not having done it sooner. Plus I find a glass of sparkling water feels so much better after hard work outside.

Agree that this is complete hogwash. The compounds mentioned are naturally occurring citrus oils—the exact things that give lemons, limes, and lemongrass their particular flavors.

This reminds me of when Facebook blew up about there being "fecal bacteria" in men's beards, and therefore OH MY GOD MEN HAVE shite IN THEIR BEARDS. Simply because a particular thing is found in another particular thing doesn't make them synonymous.

I’ve made cherry lime in my sodastream. Bought some cherry extract and lime packets. Pretty easy and tastes better. I also carbonate it a bunch so it’s really fizzy. Tap water is cheap.

No boiling. Just run tap water through a charcoal filter directly in to my keg. I add salts directly in the keg, too.
