Agree there is little, but Union Ramen is very good.

Hard disagree. It's not Popeyes spicy level spice - but flavor is definitely there. More of a soy/asian influence on the flavor for sure. My only issue was the crunch factor was gone by time I got it home. But that's the nature of takeout fried chicken I suppose. Came back fine after I reheated it in the air fryer. They were also slammed and trying to turn out numerous orders so I wonder if their oil was hot enough. Saw they're going to start doing delivery soon.
Also I thought the gumbo was more than fine. Much better than many other restaurant gumbo's for sure.

I tried out the fried chicken iteration of kin and it was a mixed bag--they have some kinks to work out:
--gumbo was very tasty, I thought. Okra, bay leaf, not too thick. It was a respectable version.
--white beans garnished with fried crumbles were delicious; spicy, creamy, spot on.
--my bone in chicken (wings and a pair of 2 piece orders) was all quite underdone. Chicken was barely cooked & thus tough to separate from bone. Wings were impossible to pull apart as the tendons were still extremely firm. We didn't eat it all & honestly the next day's reheated version was a slight improvement on the original. It's a wet-battered crust, but it seemed to have very little seasoning in the crust.
We didn't get any sauce on the side or sprinkle or anything extra in the bag....but they really, really needed to cook the bone-in chicken longer....kind of disappointing for $40 in takeout chicken.
Hopefully they will figure out the timing, bc if I didn't live 45 mins from there, I honestly would have taken it back for being underdone.
Another weird thing: in its ramen iteration, the seating area & bar & bar back were rustic but charming. Right now, the place is a visual mess. Racks piled up with ingredients, shelves pulled off of wall w/the hardware left behind, and an overall chaotic vibe. There were at least 4-5 employees and lots of shuffling back and forth, so maybe it's just reboot chaos energy working its way out. Honestly, it needs a tidy up and maybe a coat of paint.
