15 lb bird. Injected with a mix of butter, Cajun Power garlic sauce, Paul P's poultry magic, NuNu's, and ground thyme. Rubbed the outside with olive oil, salt, and pepper.



This was my second time smoking a turkey and I was happier with the results. Much less salty than my first attempt. Smoked at 275 with a hickory and cherry on a Masterbuilt electric model.

Plus some chicken wings. Marinated them overnight in LA red dot hot sauce and tossed in a spicy garlic buffalo sauce. I forgot to get a pic after saucing



And finally a little crawfish mac and cheese. I had a lot of tails in the freezer, it's easy, and the SO loves it.

Looks great. Smoking a bird is my favorite method by a mile.

Looks great. I did a whole chicken on the Char-Broil oil less yesterday. I didn't inject it but I should have. It still came out good but it wasn't flavored unless you had an out piece with some seasoning. Next time I'll inject it.

Question on your wings..... do you find soaking them overnight in hot sauce gives them a vinegar taste? I soaked some in to basso for 4 hours, I found they had a vinegar taste to them and didn't enjoy them, maybe another sauce wouldn't be as bad.

Well this time I did it the lazy way. I don't really measure but I'll wing it for yall.

Saute some trinity and about 4 cloves of garlic in some olive oil with salt and pepper. Once the onions are translucent, add a healthy spoonful of butter, about half a cup of milk, and about a quarter cup of sour cream. Stir that all together and add the crawfish tail. Simmer until it thickens and set aside.

This time I just used a box of kraft deluxe sharp cheddar mac and cheese. I always add a capful of liquid crab boil to the water before boilng the noodles. Make according to the directions on the box and mix it all together.

If I'm going from scratch I just use more milk and cooking the trinity and add in shredded sharp cheddar, usually a drained can of diced tomatoes too. I'll tighten it up with a cornstarch slurry if I have to.

I just went with what I had on hand this past weekend since it was sort of an afterthought and I didn't feel like making a trip to the store. Whenever I have leftovers from a boil I throw whatever in there and we'll have it as a meal by itself. Very easy and quick. Hope yall enjoy

I smoked some pork butts and a chicken Saturday on an electric smoker and the chicken was outstanding! I had to pull the pork early, so it didn't turn out quite as good, but I'm definitely going to try a turkey before Thanksgiving.
