Jambalaya Setups - R&R vs Gary Matte

There are numerous posts of people searching for jambalaya pots/burners/etc. on the board. It seems the general consensus is that the go to for top quality stands/combos are the R&R stands in Paulina, and the Gary Matte Home Center stands in Rayne.

My question is does anyone has experience with both to recommend one over the other? I know I am getting one or the other but having someone who has experience with both would be helpful. I am looking for a 10gal setup and will probably want to get a 5gal pot soon as well.

I have called both and received the following prices as of today:
(All prices shown after tax for Gary Matte, and tax is included with R&R).

R&R Welding:
10gal Carbon Steel Combo w/ casters ......... $441
10gal Carbon Steel Combo w/o casters ........ $371
10gal Aluminum Combo w/ casters ............. $591
10gal Aluminum Combo w/o casters ............ $571

Gary Matte Home Center:

A lot of people praise the R&R stands, but the normal ones he sells are carbon steel. I want aluminum so that rusting is never a problem and for the lightweight. I am find it hard to justify spending an extra $100 almost to go with R&R aluminum stand though.

Thoughts? What would you buy?

Curious, what are your thoughts behind this? My biggest concern is longevity and rust.

I've bought 7 rigs from Randy at R&R, I can't recommend him enough...depending on how busy he is, it takes him a while to get to your order

Uniform heat without hot spots. My BIL has one very similar and he makes some damn good jambalaya with it. Something like that stays out of the elements and oiled. Once it’s seasoned you absolutely don’t want to let it rust. A $500 setup like that is much different than a black iron skillet you toss around. Show up with something like that and mouthes start to water. Better be good at it though.

The cast iron pot itself will certainly stay oiled/seasoned well, and both the pot and the burner will be kept in my shed out of the elements. I just know i have some carbon steal burners currently that are rusty even having been kept in my shed. It sounds like this isn't a big issue to worry about though based on what I am hearing from y'all.

I expect the pot will absolutely outlast the burner, that part you’ll just have to figure out how to replace effectively.

A seasoned pot seems to add to the dish somehow, and I’ve never seen a seasoned aluminum pot.

I guess that's where the miscommunication is happening. The cast iron pots are the same from both of them. It is the stands that I am comparing.

Basically R&R makes a stand that is carbon steel for $441, and Gary Matte has one that is very similar, but made of aluminium for $485.

I know the aluminum won't rust over time and will last forever. That's why I was trying to get others' opinions. I wanted to see if there was something I wasn't thinking about, or something that makes the R&R stands superior.

Ah, I only looked at the pics to ensure the pots you were looking at had round bottoms and were the proper ones. Yea I think an aluminum base could be nice. My BIL has the cool hook grip handles to lift the lid and move the pot, pretty neat.

Go ride by Don's Country Store in Reserve, I was in there today and he has some really nice set ups.

You sure that is made by Gary Matte?

I have the original run of that stand.... it’s made by Hebert’s Machine in Rayne. I got it at Gary Matte’s years ago.

I’ll tell you this.... that aluminum stand is hard to beat. If you have the one with the holes in it you can run the stainless rods and use a bunch of other pots on it.

I’m sure it’s made by Hebert’s machine shop, but they don’t have much information on buying them there.

For the record.... I’m not affiliated with those guys.

I’ve had mine for probably close to 10 yrs now and I use it a good bit. Those guys are serious aluminum guys.... that stand won’t rust and it definitely won’t fall apart.

That being said... mine was one of the original runs and my legs are welded to my stand. My buddy has a later version, probably only by a year or 2 and his has bolted on legs and the holes for the rods. Again, he uses it very frequently and it’s still as good as new.

I have a 15 gal from a R&R and a 5 gal from Gary Mattes place. I had Randy oversize my burner and you can’t do that with the aluminum as it will burn a hole in sidewall according to the manufacturer. Aluminum one does it’s job but only reason I didn’t get another R&R setup was a shorter drive. I’ve been cooking on my R&R setup approximately 20 years, My aluminum one does not have the stability of my steel unit. Only maintenance I’ve had to do in 20 years is change hose and repaint. I use my 15 gal setup about twice per month.

Gotta believe Randy puts out an overall better product...my first 20 gallon rig I bought from him is pushing 50+ pots of jambo and it's still going strong

Planning a trip to Rayne in the next few weeks to get the 10 gallon version. Looking at the pics on their fb page, i will likely spend a lot of time/money in that place.

Sucks that they close at noon on Saturday.
