How practical would it be to make small batch (~3 gallon) jambalaya on a 28,000 btu side burner (Camp Chef 14") ? If it is, is there a flat bottom + round interior style cast iron kettle I could get or should I just stick with flat bottom?

You can do it but, it may take a while and it may never reach a full roiling boil.
28,000 BTUs is just below the threshold for boiling 3 gallons of water.

It’s just like using a stovetop burner.

I would do it. You should use your CC and smoke the chicken and sausage before putting it in the pot!

I've got a Camp Chef three burner camp stove with 30,000 BTU burners. I cook jambalaya in a 5 gallon flat bottom on a regular basis and have never had an issue with bringing it to a boil.

Bayou Classic makes a 2.75 gallon cast iron pot that has a round bottom inside and an attached ring on the outside.

Anyone have experience with this? It looks tippy.
