Jambalaya - little big meal (updated with photos of end product))

The Little Big Meal at Fresh Market this week's is Jambalaya. My wife picked it up, so I gave it a shot. As I have mentioned, before, I get a 30% discount because my son works there.
The meal comes with trinity, chicken or shrimp, andouille sausage, crushed tomatoes, cajun seasoning, and rice.
I browned the chicken, and then the sausage (after removing the casing).
Then I added chicken broth (not included in the meal), trinity, garlic, rice, seasoning, and the chicken and sausage.
The final product was pretty good, all things considered...

Save the tomatoes for a spaghetti.
Also those vegetables are cut way to big and you need more onions.

That looks terrible, no color on the meat you browned and you didn't sweat your veggies at all?

Certainly looks that way. Jax has cooked enough great looking meals to get the benefit of the doubt, imo.
But you used a non stick pan, didn't you jax? Can't get a good color that way. But im sure it taste fine.

No, I used a cast iron Dutch oven. My concern was that it was chicken breast and I didn't want to dry it out. I normally would use chicken thighs for this. I have made chicken stir-fry with chicken breast, and if you brown those small pieces to much, they can come out dry. So I probably pulled them too soon. It actually came out pretty good - the chicken was still moist, but I would have preferred it if it came with thigh pieces...
