I've personally never made a great jambalaya, but I had a roommate in college whose dad made an AWESOME one. I'd not go so far as to say I preferred it to a good jambalaya, but it was really good. You've just gotta appreciate it for what it is and not expect it to be what it ain't

Made my first pastalaya last week. Al denta pasta was perfect. I was less scared of it than Jambalaya because I can make perfect pasta but my rice is hit or miss.

All the haters don't know what the hell they're talking about.

Try this recipe...

LINK

I've added more stock, reduced, added more stock, then added cream, then reduced again.

Try the link's recipe first.

I am of the opinion that a good Pastalaya is infinitely better than a good Jambalaya.

Put that in your pipe and smoke it.

I would put money on poche being able to hold his own with any jambalaya you have tried. Dude knows his jambalaya

Well they ate the whole pot. Those city girls don't get pastalaya too often. They eat sushi and stuff like that. Of course my boys and their friends and their girls all ate too. No complaints. Fed 10 people on 1 lb. # 4 spaghetti, 4 chicken breasts, 3 lbs. pork temple meat, 1 lb. sausage and half a link of andouille.

Damn kids drank all my beer too.
