a technical ESB won't sell like a pastry stout or some other bs. I enjoy technical beers as well but in todays market you have to be creative with some to succeed.

I'll get on my old man soap box and say that i love more "technical" traditional beers nowadays than all of this hazy, juicy, or "taste buds of an 8 year old" beer. I do enjoy a nice NEIPA from time to time, but EVERYONE is doing them, and not everyone does them well. Rally Cap makes some really good Haze, IMO. Gilla is all in on the haze and anything but beer flavored beer (though they do get great reviews and i can't judge them on beer quality because i've been to their brewery once when they were out of almost all of their beers). But no one is making a good czech pilsner or a good ESB like you mentioned. Not a brewery in this state is making a classic saison. I just wish someone would make some traditional beers for the classic beer drinkers. I get that haze and juice and skittles and diabeetus stouts sell. But maybe someone could sneak in a saison, non adjunct stout, or czech pils? I'm not saying Istrouma is going the route i don't care for, this is their initial release and i'll give them time before judging accordingly. This is more my opinions on the state of craft beer in Louisiana rather than the new breweries.

and FWIW, the majority of beer i've been buying lately has been European beer styles.

Pilsner Urquell
Paulaner Oktoberfest - best oktoberfest out there. Have yet to have an American made Oktoberfest that comes close.
Weihenstephaner Festbier
Saison Dupont
St. Bernardus Abt 12

and then some classic beers from American breweries

Sierra Nevada Pale Ale (relatively fresh)
Cigar City Jai Alai
Dogfish Head IPA's
Lagunitas Little Sumpin Sumpin and Hop Stoopid (when i can find it)
Allagash/Saison Dupont Brewer's Ridge

I'm enjoying drinking these "old beer styles" more now, which is making beer shopping fun again for me.

A Louisiana brewery that makes a really good tripel or quad would be nice, especially a quad. And not one loaded with cherries or some shite like that.

I know one of the guys involved from homebrewing and his beer was anything but lackluster. I know homebrewing doesn't always transfer to pro brewing but the dude is creative AF

Who is actually still involved in Istrouma? The people I knew who started on this train are, or even got on in the middle, have all jumped out.

Copperhead’s is good, though I do prefer just the regular Medusa.

It’s not that I think the cherry quads or peanut butter stouts are bad. I find many quite tasty. But like the hayze boi IPAs, the amount of them on the shelves these days and in taprooms vs just the regular good stuff is frustrating.

Parleaux is doing exactly that. Nice change of pace from the hazy IPA's, though I like those too.

Picked up some of their Monk's IPA last weekend. That's a damn fine beer.

Hmm, I didn't even know that they had opened. Last I checked, they were having technical difficulties.

this is key in the post. I LOVE NEIPA..... I do not like many commercial NEIPAs.

If me and my buddy ever were to get our brewery off the ground we have a specific tap list we would have.

Kolsch
Blonde
Altbier
Saison or 2
heavier Amber
maybe a porter or Stout
and a neipa or 2

We arent sour heads or stout heads. but that list hits most the spectrum. the Kolsch we have developed is on par with the best German kolschs we have gotten our hands on, the blonde is one of the better blondes i have ever drank, and my buddy has been putting out good saisions. Im do not like a very saision-y beer so thats why i would want 2, one that is light and one that is more funky.

Don't fall into the trap of Southern craft.

I need to try that. And, i need to get you some of my beer. I don't think you've ever tried any of mine.

You need to try my L'internationale saison. If i were to start a brewery, i'd go mixed fermentation mostly, with some kettle sours, a stout, and a pilsner mixed in and probably a NEIPA to keep the lights on. If anything gets accidently infected then that just becomes another mixed ferm, lol.

Oh, and just checked Istrouma's beer list.

Istrouma Blonde - A refreshing blonde with local honey and a touch of wheat.
Rouche D'Abielle Rouge - A wine-like honey ale with marionberry.
Lena Lei - A sour ale with hibiscus from Lena Farms and mango
Bourbon Barrel-Aged Black Ale - A light bodied dark ale with a boozy bourbon finish.
POG Slammer - A sour ale with ample additions of Passionfruit, Orange, and Guava.
Cafe CocoNilla Country Dark (12%) - This big, decadent stout begins with a long rolling boil to create a thick, velvety beer with rich notes of chocolate. Then we rested the beer on coconut flakes, Madagascar vanilla beans, and a special blend of coffee from our friends at Cafeciteaux Roasters.

ha i would go the snakes a sparklers route. I just wouldnt want to spend time experimenting with sours and stouts to have multiple of them. I would entertain a rotating one. We have done some decent fruit sours but nothing i would really care to sale.
