DFW folks--don't forget about Heim BBQ on Magnolia Avenue in Fort Worth. Travis is killing it over there.
I was recently up that way on business and you are correct Heims is very good. The brisket is good and those burnt ends oh my.
To the OP I would say no Houston is not the best town for BBQ but over the last 5 years Houston has stepped their game up tremendously. I recently ate at both Killens and The Pit Room. I give the nod to Killens because I liked their beef rib and sausage better but The Pit Room is right there close with Killens.

How is Pinkerton's?
The owner/pitmaster was in my LSU spring orientation a decade ago but he ended up at UT. Seemed like a quality dude at that age.

How is Pinkerton's?
Tried Killen's for first time today. I got there right at 1105am, and had to wait in line around 40 minutes. I thought it was all excellent. I got a brisket, ribs, burnt ends, green beans, and collard greens.
I moved to Houston back in July, and have been checking out all the big name BBQ places.
Here's my rankings of the places I tried, ranking the brisket (which is the consistent item I order at every place)
Brisket Rankings
1a Corkscrew
1b Killen's
3 Ellis Bros BBQ (popup at Lee's Chicken & Donuts)
4 Tejas Chocolate and BBQ
5 Pinkerton's
6 Roegel's
7 Pit Room
8 Jackson St.
9 Gatlin's
10 Brookstreet (Montrose)
Also, have tried rib tips at Ray's BBQ (good), ribs at Pizzitolas (bad).
From the OP, looks like I need to try Truth (waiting for Washington location), Brisket House and Brooksplace
