Poop, I didn't miss the celery. I had 2 large fennel bulbs and used all of both and 3 good leeks in addition to extra garlic and a good bit of extra onion. I used a cabernet that I had. I don't recall what it was. I didn't have enough homemade beef stock here, so I used part Campbells and part Swanson's which I don't like much. Instead of salting the mixture, I used a low salt beef bouillon that I order online, but better than bouillon would work if you keep the salt down.
They don't brown much in the oven on that temp for 15 minutes. I would consider browning them in the pot a bit and then sauteeing the veggies in that next time. I don't know what difference it might make overall, but I will probably try it although this tasted really good. It's just in my nature to mess with things.
Another thing I'd consider is flouring them just a little before browning to give the sauce some body if you like. Look at Pioneer Woman's recipe and her method of browning the ribs before she braises them.
I made the stone ground grits with part water, part cream. I think it was 3.5 cups water to 1 cup cream to one cup grits. I added a little cream because I had the temp up too high and they needed more liquid to finish.
The flavor of the meat was terrific. Really picked up the flavors of the sauce. I had more ribs than 6. Think I had about 10 but some weren't too meaty. Threw them in for flavor.
I refrigerated it before serving because there's an awful lot of grease from the meat. I was able to remove pretty much every little bit when it hardened. Also tastes better if you can do that. I did that on the same day. Put it in the oven in the morning, let it cool, put it in the fridge and then finished it.
This is not a recipe that needs exactness. Just flavor and it has that.

I think that's from using the Campbell's broth. It's darker than a homemade which is probably what Ina used.
