In hog heaven this morning

I took down a quart of chicken/sausage/okra gumbo on Tuesday and had a bit left in the fridge and had cooked a 2 gallon pot of jambalaya 2 nights ago.

So for a late breakfast I had gumbo over jambalaya and that put me in a Cajun food, hog heaven coma.

Only thing missing was a nice dollop of my Cajun Potato Salad to go with it.

That it is. I’m also a big fan on jambalaya with a bunch of white beans dumped on top

Peel the potatoes and cube in like size pieces. While doing that get your water to boil and add seafood seasoning to it in a similar proportion you would for boiling any seafood.

Boil the potatoes until fork tender and drain.

While the potatoes are boiling, dice up the following to suit your taste:

Onion
Celery
Green Onion
Dill Pickle
Salad Olives w/Pimento


Add the following:

Sweet Relish
Mayo
Mustard
Cut up boiled eggs

I drain the potatoes and use a potato masher to break them down from chunks to small pieces and then add all the above ingredients. Mix well and you should wind up with a fairly creamy potato salad with small chunks of potato in it.

Do not salt or pepper this until it is totally mixed and checked for seasoning. The seafood seasoning adds salt a pepper to the potatoes as they cook.


ETA: I've also made it with crispy cubes of my homemade bacon fried off until nicely browned.

No, just NO. I can't tell you how many "Authentic Cajun" restaurants I've run into when riding cross country on my motorcycle that think adding Tony's to a dish automatically makes it "Cajun Food". And better yet, Tony's and Tabasco Sauce for the Genuine Cajun Experience.

This with fried fresh speckled trout is one of my favorite things to eat.
Especially if the beans are a couple of days old.
