I'm Working On A Documentary about Creole Cuisine

Know any Creole influenced Chefs or restaurateurs? I am based in Atlanta but will be traveling to various cities for filming and interviews.

Famous Foods in Lake Charles is owned and operated by the Darby Family. Amazing Family! its a BBQ joint but unlike any BBQ establishment you have every been to. The soft and spicy cracklins are IMO the best! I would bet you could find Creole influence from New Orleans to Houston.

I wasn't even trying to be a jackass here either. There are people whose thoughts and opinions on food I respect who define the term differently than I would.
It's a very fluid term/idea, such that I was genuinely trying to nail down where the OP was coming from on this.

Actually he probably does. It's you Louisianans who are going to assume he's referring to Louisiana Creole and not the much larger representation of Creole food found in just about every European colony founded in this hemisphere.

Dude, see my post above. I wasn't putting him down in seeking that clarification. I understand and accept that there are various interpretations of what that means. I wanted to know which perspective he was coming from to see if I could be of assistance.

Creole and Cajun foods as well as ethic groups are very much alike to the outside world but are very different. Cajun cooking generally consist of using garilc, onions and pepper while creole is also using those same ingredients plus tend to be more herbal reflecting the West African and Spanish heritage. I would say since cooking cajun/ creole food is generally passed down from generation to generation it is almost the same today. Here is something to take note and I do think all on this board can agree to. The food along the I10 corridor from the West side of the state to the east can taste different. EX. the Gumbo cooked by Memere in Lake Charles will differ from Memere's in Lafayette and so on the further east you travel. this is just BehindU opinion! lol there are some amazing cooks and chefs on this board that could probably be more eloquent on the description

There are creole people in the Caribbean and creole people in N.O./SE Louisiana.

Correct. And pretty much everywhere else the Spanish, British and French displaced and shuffled native populations.
On topic, I don't really know of a singular "creole" chef in New Orleans to point to anymore. Certainly you could have mentioned Leah Chase or even Paul P back when they were alive. Besh maybe before his impropriety's. Now days I don't know. Link, Brightsen, Nina whatshername, Kevin Belton?
