I'm in a somewhat strange/good living situation - need "cooking" recs

So I'm working out of town and was staying in a hotel for a while
Found this room share situation on craigslist and it's odd to say the least. The woman who owns the house is disabled and just trying to get some help with the bills. She is adamant about cooking all or at least most of my meals for me as well as doing my laundry
Not really used to someone waiting on me hand and foot but I'll take it. So far it would appear that she's a pretty proficient cook and she says she can cook just about anything so long as I supply the ingredients.
I'm trying to stay somewhat low carb so trying to think of some meals that would be good to reheat at work for lunch. Any suggestions for such an odd situation would be welcomed.

Sounds like she's trying to fatten you up. I'd be weary. I read a story about this as a kid.

Sounds like you'll be helping her and she'll be helping you. Re: food, since you want lower carb, I'd suggest things like tuna salad, egg salad, and chicken salad, as a start. You can gauge whether her cooking style and your taste are in sync....then maybe branch out to more ambitious things. Ask her what she likes to cook, and what she usually prepares for herself. This can help you figure out if you can meet in the middle. Her cultural background (Italian, Cajun, etc) might influence the foods you'll get too. Hint: if she's a pasta loving Italian, you can buy Barilla Protein Plus pasta, which is lower carb and higher protein.

Seems like she is pretty good with savory southern dishes. She made some collard greens, beans with a ham hock and some cornbread yesterday and I took some of the leftovers to work today. All very flavorful.
She also made quiche lorraine and it was one of the best quiches I've had (apparently that's her favorite thing to make)

Ask for some crustless quiches if you want to stay low carb. Many variations of meat/cheese/veg to put into the quiche.

I was thinking of that. Seems easy enough and would make for a good breakfast option.
