Ideas for day old bread

Meaning, in these times, I'm not sharing and using my bread the way I used to, and I'm finding myself with staling french bread which would be headed for the garbage.

Give me some uses for day or two old bread so it just doesn't get tossed.

This or make your own croutons if you're a soup and salad type. I make my own croutons and they come out better than store bought stuff.

Savory or sweet French toast
Savory bread pudding, which is like quiche: easy to add odds and ends of leftovers to make something tasty,
Breadcrumbs
Croutons or crisps (sweet or savory)
I like to freeze bread before it gets too stale. It defrosts and recrisps in 10-15 mins at 350.

Which is a bit of a shame, the guy/girl seems to have a large knowledge base when it comes to food, especially bread. Always wondered if they are a professional chef/baker in that regard or not.
