The pastrami jerky recipe in this link is great. Lots of other good recipes listed as well.

Thanks
I’ve always used round steak.
What’s better flank to round?

This is what I use to make mine but won't put measurements since I depends on how much I'm making at the time and I don't measure shite anyway.
Slap Ya Mama
Worcestershire Sauce
Soy Sauce
Hot Sauce
Garlic Powder
Smoked Paprika
Cumin
Black Pepper
I season the meat and mix it quite a bit by hand to make sure it is all covered evenly, cover the container the meat is in and refrigerate overnight. During the night I will mix it a few more times before taking it out the next day and smoking it to finish it off.
ETA: I only use eye of round and cut across the grain. One eye of round roast will usually yield between 40-50 pieces for me to smoke.

For those that smoke, are you not using a cure?

No cure, no problem.

Do you eat it very quickly? I do not like using it because I don't want to add the sodium nitrates. I never did with a dehydrator but I heard that smoking it creates a bigger risk of botulism because of the oxygen deficient environment of a smoker. Just trying not to die over here.

When I'm done making it----and I usually make about 40-50 pieces, I put some in vacuum seal bags and freeze it to eat later since it is only the wife and I.
I'll leave out about a dozen pieces that are usually eaten in a day or two after they come off the smoker.
I use to always just use my dehydrator but I built a smoker that allows me to both cold and hot smoke, so I use that for the jerky. The real smoke flavor adds another dimension to the overall taste.

I have smoked jerky quite a few times, and have not had an issue. Yes, it does go with a day or two in my house.

I don't have the recipe, but a friend of mine wanted to do something different with his jerky, so he marinated it in a Jamaican jerk marinade. It was pretty good and different, I imagine you can find a recipe you like on google

Let's put it this way. Have you ever watched the TV shows "Alaska: The Last Frontier" and "Life Below Zero"?
Those folks head out and catch salmon and shoot game to survive their long hard winters and a lot of what they catch and kill is smoked where they acquire it, especially the fish.
You think they have all these chemicals and seasonings on them when they are miles from home and plan of staying out for a couple more days of fishing to fill their need for the meat they need to survive.
Mankind has been smoking meats for eons to preserve it for long term storage and to be consumed later.
