Any tips? Which cut of beef to go with it?

It doesn't matter. They are good on their own. It's basically a "biscuit" made of pancake batter, like a little Dutch baby.

Yorkshire pudding is just popovers cooked in beef fat
roast any large hunk of beef you like, traditional is bone in beef rib and save the rendered fat.
make popover batter, put the fat either in a baking dish or individually in a popover tin and get screaming hot in the oven
pour the batter in the hot fat and back in the oven till GB&D

I’ll second using cast iron popover pans but muffin pans will work too. Rendered beef fat is best but my kids prefer ones made with ghee.
