What should I go with?

Stainless Steel
Hard anodized

agreed. bought my wife a set of All-Clad back when we were dating and she'll tell you to this day it's one off the best gifts she's ever received. she loves them as much as i love my cast and Magnalite.

I like All-Clad, I have a set, and several specialty items. Having said that, I also use several enameled, cast iron skillets, pots, and really like several of the aluminum "professional" pots/pans I have purchased from Hilton's Restaurant Supply in Lafayette...

All-Clad. D3 line is fine for most people. Figure out the pots and pans you want and buy them separate so you don’t get things you won’t use.

Right now is the time to buy. Sales all over. Check Williams Sonoma, Sur la Table, and cutlery and more websites.

Copper bimetal from Matfer Bourgeat or Falk. Mauviel has turned to crap.

All-Clad is fair clad. Several makers, including Demeyere, produce objectively superior clad.

Fissler Original Profi and Paderno Grand Gourmet are both excellent thick aluminum disc based designs. I have a good bit of each. Fissler OP is dishwasher safe.

Do you cook on gas or electric?

Functionally, a combination of materials is more versatile.

All-clad stainless steel pots have great heat transfer & retention for boiling water and simmering soups & sauces.

Hard anodized non-stick pots & frying pans for when you don't want to scrub.

And a 10" or 12" carbon steel frying pan for high heat cooking.

FWIW, cutlery and more is having a demeyere sale. Objectively better cookware than All-Clad.

Have a tramontina set that is 10 years old and looks like new. Cooks great

90% of what I cook is in my cast iron skillet or my little non stick pan.

I’d actually avoid sets and find a few solid pieces that you really like using.

I agree with this. Sets are seldom a good value due to typically containing pieces of less useful sizes. Like anything, there are exceptions.
