They were on sale and I picked up a pack but I'm not finding any recipe that strikes me as being that good. Anyone have a recipe they have used before and would use again? TIA

I usually cook mine in the instant pot. It’s simple and quick

Here’s one recipe.

Food Wishes Chinese Barbecue Pork

I don’t cook mine to the temp he does, keep them closer to 145 (I don’t know if that’s still technically “Char Siu” at that temp, they’re still delicious though), but just shows you how forgiving that cut of meat can be.

Season with your favorite Cajun seasoning
Chop a large onion
Mince a bunch of garlic cloves

Preheat oven to 325
In a heavy bottom pot with a tight fitting lid, brown the country ribs all over in enough oil to cover bottom. Do this in batches so you’re browning, not steaming.

Remove from pot, cooking down onions and garlic in the drippings. Return meat to pot, cover tightly and put in oven for an hour and a half.

Serve with rice and smothered green beans

I usually cube them up for jambalaya. They’re perfect for that.

Make a roux baw. That's the best meat for a thick gravy.

There has to be a good crock pot recipe for these I would think?

I just salt & pepper them and grill them. Sometimes I'll hit them with some BBQ sauce before pulling off the grill.
