I love salads too! my favorite is spinach feta dried cranberries and sunflower seeds. I have heard good things about roasted beets. where can you get a roasted beet salad in BR?

Me too!!! For a basic salad you can't beat a ceasar salad.

And I agree about meats on a salad. I'll put tons of stuff on my salads, but would rather have chicken or whatever on the side and eat it separately. Although, if I do anything on a salad, it's salmon.

Most places are doing roasted beet salads these days and have for the last three or so years. It's the trend. Plus we are coming into fall so they will be harvesting soon.

I roast my own and they are easy. Whole Foods carries them in purple and gold. Cut the greens off and scrub the beet under cold water. Trim off the bottom and x the top. Rub with olive oil, salt and roast in 350 oven for about 45-60 minutes just like a potato. Done when pierced with knife is soft.

Put it a bowl and cover with plastic wrap to sweat a bit then cool and peel. Slice or chunk and serve with a nice goat cheese greens and pecans or walnuts. You can put a bit of oil and vinegar but I just prefer salt and pepper.

Where latex gloves when peeling or your hands will be purple.

Thanks Martini. I have noticed the fresh beets at Whole Foods. I roast other veggies and love them. I also like goat cheese so I will try this. Not sure why I haven't noticed this trend on menus. Maybe I should pay attention. I am bad about ordering the same things at restaurants. Once I find something I like I order the same thing when I return to that particular restaurant. I just rotate restaurants for variety.
