I got a jar of duck fat for Christmas. How should I use it?

I have some leaf lard as well. Tell what to do with that too.

Many things.

Fry potatoes. Confit things. Roast veggies. But maybe my favorite is a duck fat roux.

Good for diaper rash if you have a little one.

Think about it. Have you ever seen a duck with diaper rash?

helen rennie duck confit
I haven't tried this recipe yet, but I made her chicken liver pate and it was outstanding.
Plus she's super easy on the eyes and that accent is intoxicating.

Duck confit. Use legs. Cover with the duck fat and bake at 225 for 4-5 hours. Delicious for use in salads or other recipes. Strain the fat and put it in a jar for future use.
