I found a 3 year old roast at the back of my freezer

How sick will I be if I cook and eat it? It's vacuum sealed and I don't see any freezer burn or anything.

Will be one of the better ones you’ve had, assuming it doesn’t fall apart. Aging things in the freezer is a legit way to tenderize. Obviously make sure it doesn’t smell bad from that time you lost power.

Reminds me of that time China found a bunch of meat being sold on their black market that dated from the 70’s.

freezer burn is what always ruins steaks that have been left in the deep freeze for me.
if it was vacuum sealed and has none, it should be good.
it certainly won't make you sick as long as it was frozen before it went bad

You won’t get sick if it never thawed out. If it even has a little freezer burn on it, don’t waste your time cooking it though.
