I wish I had that 15 minutes of my life back. Why do people insist on making such a simple process so got damn difficult? They didn't peel worth a shite either. Fat didn't come out on the tail and the tail didn't slide out of the shell.

He has some good bar be que recipes but he needs to stick to that. I also seen him come to LaFourche parish and cook a jambalaya with a Fella from below the Intracoastal.... parboiled rice, Kitchen Boquet and Guidrys Seasoning, I'll pass.

i have a 100 qt one with a double jet burner.
The bottom is designed different with these metal knobs all over the bottom. It helps keep the heat at the bottom versus going around the sides. Go to website and there use to be a video of the science behind it.
Put it this way... I have filled the pot to basically the top with water. It will come to a boil in about 18 minutes.

This video has been posted on here a couple times now. It always gets mixed reviews.
"Spicy" is not a word I would use to describe these. 4 bottles of liquid, 2 big containers cayenne, plus the equivalent of like 2 bags of seasoning that are supposed to be premeasured at 1 per sack? Then jalapeños (albeit picked), plus that reaper stuff? Holy shite.
But the two pot method has been discussed before. It's not for everyone. If you are doing multiple sacks, it's certainly something to consider though. As for the steaming, many of the larger boiling places are utilizing this now. It takes less fuel to cook them than boiling in water. And they don't take any seasonings until the soak anyway, so why not? Don't know about the cleaning aspects of it. The water after boiling would be just as dirty as the steaming.

I just became familiar with the Jenkins method last night, after watching ole Ronnie demolish a pile of crawfish and set the world record.
There's really no way that they could be bad, with everything he has going in that pot. I can see pureeing the onion and celery being a good idea. Lemon concentrate? Sure.
4 bottles of liquid boil? Ok
6 turbo dog beer to steam them? Why not (it's a drainpour irregardless)
But, bay leaf? Sheeeeeeeit
May as well start breakin' out muh Chackbay heard me....

If I'm boiling more than 2 sacks, I'll break out 2 pots
One for boiling and one for soaking.
Helps get the crawfish temp down faster to soak and takes less time to get the boiling pot back boiling since you don't have to cut the fire very long at all.
I season both pots though because boiling in plain or salt water just don't feel right, not to mention I don't want to see how dirty it would get. The red kinda hides it.

Poster above is saying that the steam method is being used more commonly than we realize. I can believe that.
The other thing he said in the video, which makes sense, is that the corn and potatoes don't get to soak with the bugs. That's not a bad plan either. Corn and potatoes bring nothing to the table, flavor wise. They're just there sucking up all the flav.
