The origin story goes like so, right? Wives wanted to make a cheap meal with leftover ham bone from a dinner the day before, that could be simmered while doing the washing.
If they had access to chicken instead of pork they would have used that. I wouldn't overthink it. Would keep a smokey element to it however.
I've done one that used a leftover spiral cut ham. Turned out fantastic, and they are always dirt cheap after New Years.

I doubt folks who patronize a soup kitchen care one way or the other whether it’s a faux pas.

Yeah, it’s not like you’re feeding them rotten food or something gross. I’m sure some south Louisiana housewife once was making a pot of red beans, realized she didn’t have much sausage, threw some leftover chicken in the pot and the whole family ate it with no complaints.

Stalekracker has been pimping his own brand of this on his videos, I am skeptical of powdered trinity. You vouching for it helps, but part of the fun of cooking Cajun food is the smell of the trinity cooking down in the kitchen.

Just fry the chicken and do the red beans sans sausage. You do need something, ham, bacon, whatever to cook down with the beans but plenty of places have sausage on the side and not in the beans, I don't see why you couldn't just leave it out.
