How long should you keep heads-on Shrimp before boiling?

From buying at the market to boil?
I try to do crawfish next day at the most.

I bought 20 lbs. today from the lot in Westwego. They are beautiful and at $4 a lb., a hell of a bargain. Pretty much 16-20's with just a handful of smaller in the mix.

I'm going to boil 5 lbs. later today and have already peeled the rest then put them in quart freezer bags with water and in the freezer.

Then all the heads and shells hit the stove in my big pot to boil for shrimp stock and I have 7 qts. cooling off to go in the freezer later.

I prefer to boil the same day I get the shrimp but have done it the next day as suggested above, on ice, both under and over them.

A lot of women post here and I used the C-word so I expect my downvotes. But that doesn't explain the dv's on the the op or the first response.

It's bizarre.

From the time a shrimp is caught till it needs to be frozen/cooked is about 3-4 weeks, if they were properly iced. If you're being sold defrosted IQF shrimp I wouldn't go longer than 3 days. Unless you catch them yourself or buy them directly from a fisherman you have no idea how old they are.

I hope this is true! I'm picking up a bunch in the morning from a Tybee Island shrimper caught this morning, but my boil event isn't until next Saturday, my plan is to keep them iced in an igloo with the drain open, and re-iced daily or as needed. I've never been in a position to have to keep fresh shrimp this long, normally it is same day or the next.

OK, the shrimper today told me three days max on ice, then de-head and freeze.

I'm torn.

My PawPaw was a trawler, in the days before freezer boats they would stay out for a week or 2 before they came back in to unload. All of their shrimp were iced down. If the shrimp you bought were caught within the last couple of days they will be fine this coming this weekend, keep them iced really well.

I could drive 5 hours to Tybee, one way, and get a better price than what I paid. The higher price is because they brought it to me. It's the price we pay for fresh shrimp living many hours from the coast.

Soo much depends on what type of shrimp and were caught?
When did the boat catch them versus get in versus sell
Did they ice them when caught
Did they bleach them
Here in Louisiana we can buy shrimp within days of being caught and beat when the inshore season opens. Then we buy and dehead and freeze same day and have great shrimp until next season. And cook same day will boil the heads for stick and frees that and perhaps fry the spiders same night or second night.

Shrimp came out of the water on Friday May 30, iced, and I bought May 31 Saturday, on ice.

Today is Wednesday night and I have been draining and changing out the ice daily, and also tumbling them around in the cooler during the ice change, so they stay mixed up with the ice.

So far so good.... I inspected and sniffed a bunch of them for funk and they still smell good and fresh.

I hope I'm not jinxing myself, but I'm trying to push this all the way to Saturday the 7th for my boil without having to dehead and freeze.

But so far so good 5 days out of the water, religiously re-iced and drained daily.

I talk shite about Yeti coolers (I'm using cheap igloo) but this would definitely be an application to have a premium cooler.

Living and learning.

I now have the definitive answer. My shrimp came out of the water last Friday. I bought them Saturday. On ice. I drained daily, added a bunch more ice, rolled the cooler around to keep them mixed up and not layered. I did my boil yesterday, 8 days after they came out of the water, and they were excellent. But I wouldn't choose to do that again, too much work to keep them iced properly. If I had to repeat it, I would have just deheaded them all and frozen them. Less hassle than that ice regimen. A day or three, sure.
