Same. No need to make it more complicated in my opinion. Get the fire as hot as I can. direct heat for 4 minutes and flip for 2-3 minutes.

I prefer the smokey flavor of the grill.

Smoke roasted to 120, then seared to medium rare. Takes 25 minutes on a Weber Jumbo Joe

ETA: Most of the high end steak houses use commercial broilers (1000+ degrees).

If you like marinades like Dales (originated in Birmingham) would also suggest…..

1) Moore’s Original (also from Birmingham)

2) Pilleteri's Original Marinade (Mr. Ps Deli makes this. Comparatively low sodium and my personal favorite if I am going to marinade a steak. Also from Birmingham).

3) Allegro Original or Hickory marinade ( TN based)

4) Johnny Fleeman’s Marinade (TN based) is really close to Dales in flavor profile, but less expensive.

Pilleteri’s might be hard to find. The rest should be available.

I was headed to the downvote button when I paused and fully read the comment. On second thought I will try Moore’s because:
1) Dale’s is a bit salty and I’ve/we’ve been moving slowly away from it when possible. Dale’s low sodium version is bad.

2) that same attitude contributed to me not discovering Dale’s sooner, directly or indirectly.

Is there a specific one for Moore’s?

Don’t care as long as it’s medium rare. My favorite would probably be in a cast iron though with a nice sear on every side.

Moore’s Original is closest to Dales. Lowest sodium is Pilleteri’s (personal favorite if doing a marinade)

I think they only offer one version, ftr, I don't use it that much but my wife and 14 year old love it.

I do have one quibble with this. A grill is not the way for a perfect sear after sous vide. You really need full coverage for the post sous vide sear.

I like a pan seared steak basted in butter

I e Never had it sous vided first but I bet That would just make a better steak, so I’d be down.
