i have some that i'm not going to be able to cook and i've never frozen them before. just like regular (in water)?

yeah, we always do each side in its own gallon size zip lock bag, fill with water and get all the air you can out.

I vac seal them and the freezer life is much longer. If you don't have a foodsaver, just use the ziploc pump and vac bags.

foodsaver works great, no water needed

You have to vacuum seal it or it isn't worth a shite after a month.

I don't know how anyone that fishes doesn't own a food saver, I use it for everything.

I fish a ton and freeze a lot.For filets def vacuum pack is best. For half shell I get much better life out of ziplock and water. The skin and scales makes it hard to get all of the air out of the vacuum bags.

I'm with you, I've never had trouble freezing redfish on the half shell in ziplocs with water. I usually add a little salt to my water, too.

here is something i do with just about any fish i want to freeze "on the half shell": take your 2 filets on the half shell and put them together like 2 pieces of bread (scales facing out) and either zip-lock them with water or vac-seal them. I leave the skin on any type of fish that i want to freeze and the meat seems to be just fine.
