I prefer a crispy skin but I always loose pack several pounds when I make it so that I have some that I can eat loose. Great for stuffing or even frying up like hashbrowns.

I have people here argue to no end that no boudin has a crispy casing that snaps/breaks when you bite into it.

I steam it. Usually I try to keep it together as I cut some and place on a saltine followed by LA hot sauce (similar to how I eat oysters)
