Homemade Krystal / Whitecastle Burgers. Any hints?

Anyone try to make these in their own? Hints or cheats?

My plan is to flatten out the ground meat to about a quarter inch and then make 2 inch squares Pattie’s. Put some dehydrated onions on the warm griddle and then the meat on top. Sizzle for a few seconds and place the top section of small roll buns on top while griddling.

Serve with mustard and pickles.

Sam the Cooking Guy did an episode on this. They look like they came out damn good.

you pretty much got it.
easy way to make the patties is to put the meat in a sheet pan and flatten it out by rolling it with a mason jar, then cut with a pizza cutter

I can't remember why exactly, but their patties have 5 holes in them. Something to do with steaming them on top of the onions. I tried sliders on my blackstone after we got it, and they came out pretty close to Krystal, but mine were a little thicker. Steaming the buns on top of the meat is key.

Many years ago the guy who has done all the fast food copycat recipe cookbooks - Todd Wilbur - used to go on all the talk shows cooking some of the dishes. I remember him doing the White Castle burgers on one show.

Along with the patties having 5 holes and steaming them on top of the onions, the other thing he used when he put together the patties was a jar of veal or beef baby food. I know it sounds odd, but he swore that was the secret ingredient and made the burgers moist.

use Hawaiian dinner rolls and press out the meat super thin, grill your inions, thats pretty much it

Thin meat and a steamed bun seem to be the distinguishing qualities of those

I know someone just suggested it but I would not use Hawaiian rolls if you’re going for similar flavor because while those are the right size, they’re far too sweet IMO
