Homemade French Onion soup

Mrs Tigerpaw had her wisdom teeth pulled this week and I am a little under the weather and not feeling like making a trip to the store I looked around the kitchen to see what I could cook with what I had on hand, had just about all the ingredients needed for Pioneer Woman's French onion soup (thanks Gris Gris for the recommendation years ago).
First sliced up about 7 small to medium yellow onions and cooked down for about 20-30 minutes with some butter
After cooked down
Then put in a 400 degree oven , with the lid cracked for about an hour and a half, stirring every 20-30 minutes
Lots of color coming through
Added a little stock ( recipe called for white wine but was one of the few things I did not have) and cooked for a few minutes to get all the gratin off the pot
Then added 1 quart of both beef and chicken stock, plus a few squirts of lea and Perrins
Added some granulated garlic, a little salt and let it simmer for a half hour
Also did not have any bread for crutons and no gruyere cheese, so I topped with some grated Parmesan and shredded mozzarella, put under the broiler for a few minutes and......
Fantastic, very rich flavor and I am already feeling better

I've made it twice in the last several weeks but no recipe. I use fresh thyme and both brandy and sherry. It's good made a variety of ways. The key is caramelizing the onions well.
