Rouses sells it in the healthy food section coolers. I’m sure Whole Foods does as well.

I haven't made a kettle sour with anything other than lacto/pedia vials/packs. Do you use an entire carton or half a carton for kettle souring?

I've only ever used the single shots, and I used two if them. Not sure about the bigger cartons, but I'd wager you could use 1-2 servings worth.

I used the whole carton but it’s not necessary. I think you could get away with less. The mango one has the most neutral flavor.

I'd rather used shots than a carton. How long before you had the acidity you wanted?

Those are all on the outside of the garage, i believe.

I think it was about a day or so. I cooled to 100ish, pitched the goodbelly, and let it ride for a day in a sealed container. It came out more towards the mild spectrum, which is what I like in kettle sours.

Same here. I want some tartness, but not so much that it strips the enamel from your teeth.

I need help with this red IPA recipe

Really interested in trying sabro. I'm tired of citra/mosiac. Also I'd love to get a nice red color. So this is what I have planned. It's lighter on abv as well cause every other of my brews are always like 7%. I'd like to try to get this at 6ish. Does that make the ibu more pronounced? I wanted to keep the IBUS in the 50s at most. Also help me out with hopstand schedule. Critique away as I need some thoughts and input.

Recipe seems fine. The malt composition may take away from some of the hop flavor, but you’re doing a red IPA, so that’s expected.

In regards to whirlpool hops, that looks fine too.

I brewed my Orval clone last night. Came 6 points shy of my OG. I think I need to start milling my own grains from now on. 4 hour brew night. A session goes quickly when you don’t have to clean up as much because you have another brew the next morning.
Currently mashing in my kettle sour spruce gose. If this one has effeciency issues as well, then I will have to buy a grain mill (Christmas present!)

Speaking of which, recommendations on grain mills?

My only critique is the hopping schedule. Take a couple of those ounces and do 20 and 5 minute additions in the boil and don't just rely on the whirlpool. A red IPA is all about depth in both malt and hops. You have the malt depth, but you need some hop depth. My opinion, anyways.

I know nothing about that yeast, so I can't help you there.

I have a Monster MM2. Been using it for a decade and works just as well as the day I got it. Easy to adjust, easy to tighten, and does a good crush.

Just tapped an ordinary bitter. I've brewed a few ESBs, but never a true bitter. Came in at 3.1%, but it still has plenty of flavor. I think I have it a touch over-carbed, so I'm working to get that down.

My efficiencies of my last 3 brews have been 6-8 points lower than it supposed to be. So instead of 82% efficiency, I’m getting 60% mash efficiency. After talking with the guys at the homebrew shop, I believe my efficiency problems are due to runoff speed. I didn’t notice it until now, but in my effort to complete 2 brews in a day, I’ve been taking shortcuts without thinking of the impact.

I’ll slow it down the next beer to confirm.

i just ordered a cereal killer on AIH for $90. If I burn through that one I will upgrade to a MM, but the cereal killer has a pretty solid reputation. Doing another pale ale and trying to fix my efficiency issue with better crush and mashing techniques, similar to you

I'm looking at Northern Brewer Hull Wrecker 2 Roller mill. From what i'm reading, 3 rollers aren't a necessity and nearly double the price of 2 roller mills.



This will allow me to order some heirloom grains i can't get, like spelt, and allow me to save some money by buying a few of these grains in bulk.

Right. I may wind up doin a more traditional hops in the red and then doin a juicy neipa with the sabro vic secret and azacca /Denali/ Idaho 7. I dunno if the malt would suppress the flavors of those hops. I thought about trying some test batches bit seems good in theory but for the amount of work it seems like it's just as well to do 5 gallons. Thoughts?

Go big or go home. That attitude might be why I've dumped quite few batches.
