Back to my Christmas ale. I need some help with my hops schedule. Here is my Grain Bill.

Grain Bill (14 lbs)
80% Maris Otter
10% Crystal 60L
6% Caraamber
4% Rye

And the first variation of hop schedule and why i chose which additions for what.

.33 Mosaic, First Wort
.33 Centennial, First Wort (should i just sub another hop, preferably one of the below?)
.33 Chinook, 75 minute - Add some piney bitterness
.33 Simcoe, 60 minute - piney bitterness
.33 Mosaic, 15 minutes
.33 Cascade, 15 minutes - add some citrus notes
.5 Mosaic, Dry hop 10 days
.33 Cascade, Dry Hop 10 days - Hints of citrus aroma
.33 Simcoe, Dry Hop 10 Days - piny aroma

This is my second go at it, eliminating centennial, as it seemed a little unneeded.

.33 Mosaic First Wort (90 minute)
.25 Chinook First Wort (90)
.33 Simcoe (75)
.25 Mosaic (60)
.25 Chinook (60)
.33 Mosaic (15)
.33 Cascade (15)
DRY HOP 10-14 DAYS WITH:
.5 Mosaic
.33 Cascade
.33 Simcoe

And last night i realized i don't have any hop additions at flame out or whirlpool hops. Since hops comes in 1 ounce bags, i may just use the leftover hops for whirlpool. Right now, my IBU's are at 68. Whirlpool hops shouldn't add any IBU's to the brew, does it?

Do you have IBU calcs for those additions? I'd be curious to see them.

My first thoughts are to drop the 75 and 5 additions and put them elsewhere, such as 60 and whirlpool. Maybe even move the 15 to FWH. Also, take any hopping advice I have with a grain of salt. I've never made an IPA I've been happy with, so I likely have no idea what I'm doing when it comes to hopping other than what I've read.

The hop additions look too light to me. I would up additions to a full oz on everything. And roughly 1 oz of dry hop will not give much if any aroma. Up that to 3 oz.

According to beersmith i already have 69 IBU's. If i go an ounce with everything, that would push me to ridiculous amounts. That would be 14 oz., almost 1 lb of hops for a 5 gallon batch.

Now for dry hopping, i can understand.


What about the timing and the types of hops? I'm hoping i don't muddle the hops too much and have a weird hop flavor.

In a homebrew, 69 ibu's is not much. You don't get the hop utilization that an advanced brewery gets in my experience. I would say divide by half and that's what you get. Of course I am a hop head...I would definitely up your hop amounts. Maybe not up to 1 oz but up to above 100 ibus.

I've mixed all sorts of hops....had 8 different varieties in my last big ipa and it all worked. The Mosaic is a different tasting hop but if you've tasted a mosaic ipa and liked it then you'll be fine.

I got ya. Well i may leave the hops as per the revised schedule, and see how it comes out. I want it to be hoppy, but not overly hoppy. Still trying to convert some friends.

I've had Terrapin's Mosaic IPA twice and loved it.

Anyway, prepping for the weekend brew. With Suspense's castration ceremony coming up in a month I need to get to brewing the beer to help dull his pain. With the recent additional success of my Typhoon American Amber at Dixie Cup, it seems like that is the beer to make on Saturday. I need to get my hands on a few more ingredients but Cuban's should have what I need.

Kegged an Oatmeal Stout last night which seems pretty tasty and need to keg an IPA tonight/tomorrow night. Lots of kegs to clean after Gulf Brew this past weekend as well.

Other than BugAC's IPA what is everyone brewing.

Waiting on my kit to come in. Brewing a saison. Hopefully sat. My first batch is still in bottles but with the metal taste looks like I'll be pouring it out :(

Thanks, I did not. I don't like judging that much actually. And with family in Houston it was hard enough to get to all the stuff I wanted to get to much less the stuff I don't like as much.

Crossing my fingers I can get off Friday afternoon. Have a Belgian IPAish beer ready to brew. Belgian tripel grain bill, American hops, primary Belgian Ardennes yeast, followed up by oak/wine/brett aging. Something that sounds really good on paper, but will come out mediocre knowing my past IPA brews. Based it on Anchorage Bitter Monk. Who knows how it will turn out? Hopefully okay.

I added mangos and pineapples and Citra hops to our tropical pale ale and grapefruit and Falconer's/Amarillo to our grapefruit rye. Both have restarted fermentation a bit and i'll keg them soon for Hattiesburg.

Brewing our chocolate porter this weekend for the wedding.

I bottled a Belgian Wit last night, have a practice Christmas Ale fermenting and Im brewing an Imperial Stout this weekend.

I need to brew lots very soon. Got 6 kegs committed to different places between Nov 23rd and December 15th.

The next week doesn't look good for brewing, but gonna try to squeeze a couple of the simple ones in anyway.
