I couldn't do that. As most of you know, i'm neurotic enough about my homebrew. Ain't know way i'm going to deviate from standard brewing practices and transfer a day later.

That is the sketchy part for sure. I haven't had any issues but that is the best chance for your beer to get "infected"

As long as everything is closed up, infection chances are low. Still possible, but I have more anxiety going into primary than I do going into my chill cube. I put 200 degree wort in the cube. It kills everything.

Ain't that the truth. I went the Suspense route and ending up getting a refractometer on ebay. Now the hydrometer is relegated to inside activities.

Well, first runnings on this dark farmhouse taste good, but we shall see how the yeast turns it. Had some shite efficiency tonight. 67% :( Note sure what happened there.

I brewed it on August 27th. Kegged it on September 27th with the cold steeped espresso. Still think it needs to sit a little, but it keeps getting better.
Turned a pumpkin porter around in 2 weeks. It was/is perfectly fine. Dry hopping a session IPA right now, and will keg early next week. Both of those will be served at a trail race next Saturday.

Measured my Oatmeal Stout yesterday.
OG = 1.08
FG = 1.03 (so far)
ABV = 6.6%
My targets were OG = 1.07, FG = 1.02. I'm hitting my target abv, just not the way i was expecting. I raised the temps a couple degrees in my fermenting freezer to have it finish off a little more.
I had me a little sample. And wow. It's pretty damn good. Good roasty flavor, hints of chocolate, coffee. And a great mouthfeel to it. This is going to be really good in about 3 weeks.

I havent brewed in WAY too long. Can't brew this weekend with Dixie Cup, but will be brewing the Hill Farmstead Everett clone from BYO when I get back.

Nah, Friday morning. It is going to be a subdued Dixie Cup for me as I will be at the inlaws with the baby. Still unsure exactly how much I am going to be able to do (meaning drink)

According to Beersmith, my mash efficiency was 98%. I know that sounds impossible, but that's what happened. I was planning on a 1.07 OG, but i got 1.08. So the 98% lends some credence to that it may be correct. The only thing i can think of, is that the rice hulls or the oatmeal may have added some sugars to the mash. That's the only new variable i can think of.
I need to go check again on my brewhouse efficiency.
