Well, finished up brew day about an hour ago. Hit all my marks on the dot. Wondering if the late addition of phopheric acid will have any negative impacts.

Also smoked some jerky and dehydrated it at the same time, and am making candied pecans for Christmas. Time to drink some beer and bourbon

Might use them in a sour saison next year some time.

Kegged up the coconut porter. Tastes like a mounds bar. Really happy with this one, especially since I've given it so little thought and attention

So already got some action going. San Diego super yeast. Very pretty krausen. And this is with fermcaps. Didn't quite get the 5.5 gallons I wanted. But I think that is due to the 4.5 oz of late addition hops. Need to adjust my batch size for hop bursting IPA's.






Excited about this one. Tasted it as I was measuring my OG. Intent was for this to be piney, but the wort sample tasted very citrusy. I'm sure I can thank simcoe for that.

That is a clean looking krausen, looks nice.
I had my first blow out the other day. 2 carboys both blew out their bungs and spewed a little foam. Had to do a little clean up at 6:00 am after getting home from work but thankfully didn't lose a whole lotta beer.

After changing out all my CO2 tubing and losing a 20 lb bottle in 2 days I finally broke everything down and submerged individual pieces until I found the 3 leaks. Got everything tightened up and leak free

Really happy with my coconut Porter. Basically tastes like a Mounds bar. Sweet, Chocolate, coconut.

So this batch was the first time using San Diego super yeast. Brewed Tuesday, checked the gravity today and it is down to 1.008. Took a sip and it is very dry and is the lightest colored beer I've ever brewed. Dry hopped with an oz. each of simcoe, chinook, and Columbus, and will do the same again in 2 days, then will keg 4 days after that.

Need some advice. I'm a noob. Very noob.

I am going to secondary a porter with vanilla and oak. Can I just add those things straight to the primary fermenter after 7-10 days or do i have to transfer to another carboy to get the beer off the yeast bed?

Another question. I only have 1 carboy and 1 bottling bucket. Can I simply transfer from the carboy and secondary in the bottling bucket, then in 2-3 weeks simply add priming sugar then bottle?

Add them to the primary. You can usually do more harm than good by racking to a secondary.

You can secondary in the bottling bucket if it has a good, tight fitting lid. Mine does not, and I would also be concerned with a potential leak around the valve.

What are you using for the vanilla? I'd add it when you get ready to bottle, it won't do any good in the secondary. The oak would need a few days.

My bottling bucket had a good seal. The starter kit that I bought had instructions that said to secondary in bucket, but I wasn't sure that was a good idea. I will be using vanilla beans, so I intend to secondary for two weeks or more. Is this too much time to leave the beer sitting with the yeast bed?

To this day I still can't find a good reason to rack to a secondary. You should just ignore that everywhere you see it as a homebrewer.

Yeah, i recently stopped doing this. Took me 4 or 5 years to stop it. I noticed a huge drop off in hop presence during a secondary.

I made an ipa with a large whirlpool/steep addition, then dry hopped in a secondary with a large amount of hops. I was also still bottling (before i got my keg). So, from brew day to cracking open my first bottle it was about 28-35 days. The beer was incredible the first 3 days. Best IPA to date. However, by day 4 the hops started to fade. By day 10, it was a completely different beer. Still good and better than IPA i previously made, but it couldn't come close to touching the presence of the IPA when fresh.

I currently have an IPA about to hit it's 2nd dose of dry hops in the primary (after 2 days) and will let it dry hop for 4 more days, then will keg. Plan to push some CO2 into the fermenter then purge the keg with some CO2 just before kegging. Hopefully i get a few more weeks of fresh hops out of this one.

Got myself a keg/carboy washer for Christmas and just now trying it out. I love it! Had 3 empty kegs that had been sitting around and got them all cleaned in less than an hour. I need to head to LAHomebrew for some saniclean and I plan to sanitize and fill a couple tomorrow. Also going to see how it works with carboys.
