Pumpkin Porter

1/2 pound chocolate malt
1/2 pound 2 row pale
1/2 pound caraamber malt
1/4 pound de-bittered black malt
4 pounds canned pumpkin
7 pounds liquid Maris Otter LME
1/2 pound brown sugar
11 1/2 oz Steen's molasses

1 oz Pilgram 60 min
3/4 oz German Select 15 min
1/4 oz German Select 5 min

1 tsp pumpkin pie spice

1 pack Safale S-04

3 tbsp @ 20 and it's not overpowering at all. Wouldn't change a thing on that for our recipe.

Added 2 tbsp now. Will taste after it finishes fermenting to see if it needs more.

Not particularly.

The rhizomes come out in early spring and you plant them water them and give them something to climb up pretty high and they do just fine.

How do they compare with commercial ones aroma wise? I want to say that I read somewhere that home grown can have a more harsh bitterness, esp in warmer climates.

I diced and blended up 7 lbs of Bartlett pears last night and stuck them in the freezer. I'll defrost them today and rack my sweet potato saison on them. So this will end up being a sweet potato pear saison.

I always use pellet hops and those smell fantastic but with these whole cones if I peel them back and run the lupulin between my fingers they smell good too. I add a handful or two to the end of the boil on our IPAs and similar beers until I'm done with them. Never had a bad beer because of them so I don't know.

I pulled a sample of my saison/wine hybrid last night. Just past 72 hours fermentation time and it is obviously rough around the edges, but very interesting to say the least. Still a little too sweet and has a little ways to drop in gravity. I look forward to how this one will play out. Might need just a slight touch of oak.

Does that have any brett in it or did you go straight sacc?

I got my sweet potato saison racked on some pears. It smelled great during the transfer.

It is already starting to rock. It probably helped that I tossed half of a brett starter in there. Actually, sweet potatoes and pears are a pretty classical pairing, just not in beer. I can remember having sweet potatoes and pears at my grandmothers.

Haven't had pears in general in a long time. I used to like em a lot when I was younger.

Since we aren't tailgating today and with oktoberfest tomorrow, I'm brewing this morning. Brewinga rye porter but ddidn't have as much rye as I thought so it probably won't have the rye punch but should have some. Watching soccer and waiting for a boil. Still stuff to do this afternoon so the beer has yet to start flowing
