Please do... I stopped my commute to Nola here recently so I won't be making my trips to Brewstock as much anymore.

Anyone here make some mead before? I've brewed but never made mead. I'm thinking about doing a muscadine mead. Any advice?

Chico from Redstick Brewmasters is the one opening the store... We will be at Avenue Pub on Saturday Morning for Zwanze. He can give you all the details then if you are going.

My advice is to be patient and rack often, especially early in the process.
Too long on the trub will give some off flavors.

I make a batch of mead every year. Your worst enemy is yourself. Takes a year at minimum. You can drink it before then, but you'll be rewarded if you wait.
A trick I've learned from making wine and mead: to get the honey dissolved without heat, hook up a bottling wand to your drill and stir the shite out of it. Helps with oxygen too. Double pitch your dry yeast and add in nutrients. As it slows you might have to give it a swirl or two. A low dose of medium oak cubes during primary adds a nice touch. Don't use chips.

Figured s14 would be thrilled about this location. If they have fresh liquid yeast, I'll go there since Cuban doesn't carry that. But I work literally 3 minutes from Cuban and pop in quite a bit since it's easy for me. This location will be tougher for me to get to.

Yeah, Cuban is under a mile from home, so I'll still go there more often than not, but liquid yeast would be nice.

Do y'all think rice hulls would help it keeping from getting a stuck mash? What about maybe a mesh bag as a liner?

I tend to use rice hulls any time I have a mash with oats or wheat. They are probably not necessary when it's only a small %, but rice hulls are cheap and stuck mashes drive me crazy.

how do you use them? do you just mash with the grains? I've heard it's a good idea to soak them first.
