I have 10 gallons more of sour that will eventually need bottles. Only going to bottle one before the move I think though. The other one is newer though so may take some time. Hopeful that I only am moving 1 carboy of beer.

It should hit 1.008 pretty easily and then after that it drops really slowly. If you are bottling, I've seen that you want to wait until 1.008 or less to bottle to avoid bottle bombs.

It's going in a keg. I checked last night and it's down to 1.020 or so. I think this weekend I'll hit it with dry hops, bump up the temp a touch, and keg it next weekend. I want that freshness. Hydro samples are tasting awesome without any dry hops.
My no-boil experiment is still an experiment at this stage. The bad smell is lessening and the sacch and brett are starting to do their work on it. I think I'm getting some scrubbing action, but I'
m doubtful I'll get enough scrubbing to completely erase the bad smell. We'll see, though.

I was planning on sending a 4th, but ran out of time. I really didn't expect the submission date to be a month in advance of the competition.

I haven't been able to brew much lately, but if IPA is one of them, I can submit at least one beer.

Give it time, you would be amazed at the list of nasty compounds that Brett can breakdown when given enough time.

I'm going to brew a Fortunate Island inspired 100% brett wheat ale this weekend. I still haven't gotten my pound of Citra in the mail so this might be all Simcoe.

Always thought it would be awesome to win a GABF pro-am competition.
Knowing the Bruery, bonus points will be given for funky ingredients, inducing diabetus in the judges, and accidentally souring the entries during bottling.
