Well, If that's the case then I don't know what I'm gonna get.

I used a few spices that I'm hoping put it all together. I did have some airlock action after adding the redbeans and the aroma started to make it's way into the beer for sure. It's a first run at something that I didn't have a ton of details on so it'll be a work in progress.

I know he definitely uses beans and rice (as does 40 Arpent in NOLA).

Don't get offended when Blaine doesnt give shite up. He won't tell me a thing about any of his beers.

Yes. I don't have a PH meter or a coke scale so I'll need to find some easy ways to measure or some simple profiles I'm shooting for.

I really don't want to get too into it but I'm open to acquiring a better understanding.

Before, as soon as I heard discussions about water I tuned them out.

John Palmer's discussions on water are a great for cure for insomnia.

I use the EZ Water Calculator 3.0 spreadsheet to calculate out all of my water additions. Once you get the hand of it, it's pretty easy to use.

I've read enough positive feedback from people who compared the sheets calculated mash PH to their actual mash PH to avoid buying a PH meter for now.

Any info on when these guys will be opening.

It feels like there are a ton of start up breweries who should be opening in LA in the next year or so.

Their first beer should come out right around Mardi Gras. Michael is having trouble with the used heat exchanger he has, he would be up and brewing if it worked properly. Other than that he is basically ready to go. Been delayed a good bit due to the condition of the equipment he bought. Had to do a lot of maintenance to get it into the condition that he expected it to be in.

damn, that sucks... Hopefully they get it all up and running soon.

Did they know about the condition of the equipment going in?

I know Tin Roof had similar problems with their equipment when it first came in and have been patch working it along ever since.

Not really. He expected some work to be done, but the guy was brewing on it until he sold it to 40 Arpent. So he bought it knowing that it all "worked". However it was significantly dirtier than it should be for a brewery to be brewing on.

Reminded me of a friend who bought a Blichman Top Tier used from a guy who should have kept it in great shape. Got it home and cleaned it for like a week and ended up throwing all of the tubing and the plate chiller away bc he couldnt get it clean enough.

Good for them that they've made it far enough to have brand new stainless finally.

I bet that's going to be nice if they've been struggling this whole time.

What are y'alls stance on the concept of keeping recipes to yourself? I'm of the opinion that I will give my recipes to anyone that asks. I know a bunch of people like that. I think we can all learn from each other. Then there are some people who won't tell anything. There is one person in my brewclub who won't give anything up. I won't knock someone for not giving something up, but at the same time I don't understand it.

I could see it if there was some money at stake in any of this, but there really isn't.

personally, I like sharing what I'm doing, so more experienced brewers can let me know if they see something that looks odd or may cause an issue. I'm not trying to make anything revolutionary, or something never done before, just trying to make something I will like.

I can't thank y'all enough for the help y'all have already given me, and for the help I will be asking for in the near future as I try my hand at saisons/farmhouse beers.

That said, I agree with you that I won't knock someone that isn't willing to share.

even then, it seems kind of odd. There are plenty of clone recipies out there that were written my the commercial brewers themselves (see Stone)

I talked to the girl serving at Black Market about their 4th anniversary beer, a pale ale featuring El Dorado hops. Just so happens that's what I'm making this weekend and had been planning to do this beer since before our trip out there. I asked her if the brewer was ever open to sharing recipes, or just tips and ideas, and she laughed, saying basically that this was how they made their money, why should they share it. I don't know if he actually would have shared any info, but I never bothered to email him based on that conversation

To an extent I understand when professional brewers don't want to share...

Brewers / Breweries so times work years crafting a recipe and that is their trademark. Even Stone wont give you the recipe to Arrogant Bastard

Homebrewers keeping the recipe/process to themselves is kind of contrary to everything I like about homebrewing and the homebrewing community.

When I started brewing a lot of people helped me out. I'll feel its only right that I do the same now.

I was at Yazoo one day and noticed a clipboard hanging from a tank with their Dos Perros recipe on it. I asked if I could take a picture of it and the tour guide offered to print me out a copy of the sheet. Good Guy Yazoo.

I normally don't mind sharing my recipes, but if I had something really innovative and I thought I had a possibility of selling the idea or opening a brewery with it, then it would be in my best interest to hold it close to me.

I'd give hints about it but not the whole thing. However, I put my favorite recipe on here so it's not like I have hidden anything.

I'll do some digging when I get home. I remember it being basically a mild ale recipe with flaked maize. They;ve also bumped up the ABV of the recipe since then.
