Didn't brew, but looking at creating my own recipe for a wheat beer, but kind of lost. I don't want to buy another kit.

My porter dropped from 1.088 to 1.035 over the weekend. Gravity sample tasted great, not near as sweet as I expected.

I'm fermenting in my brewshed, which doesn't have heat, using a FermWrap heater to control the temperature.

This thing is awesome, it's only slightly warm to the touch but hasn't had any problems hold temp during the night.

That's impressive.


Tried to raise the temp on the lager and it only got up to 54 overnight from 53 it was sitting at when I upped the temp.

I'm sure it'll get a little warmer today.




That pineapple corer is the shite. Especially considering how much pineapple we've been brewing with here recently.

Make sure you use rice hulls. I've done a belgian wheat but not an american wheat. My Belgian had 8lbs 2 row, 4lbs white wheat, 1 lb oats, and 1lb rice hulls.

This is the American Wheat beer recipe that I use as the base for all of my festival wheat beers.

I based the recipe off the Mikkeller / Jester King wheat beer collaboration 'Drinkin the Sunbelt.'

SG: 1.056
Mash Temp: 152

46.4% - American 2 Row
46.4% - American Wheat Malt
7% - Carared Malt
LOTS of rice hulls

20.8 IBUs - Liberty

ETA:
I typically use Wyeast 1010 - American Wheat on this beer.

I use something like this.



I use a 1 or 2 scoops in anything that has wheat or some type of flaked grain. I've never actually weighed the hulls.

Gotcha. I'm sure that ends up being 1/2 lb at least.


You make any adjustments to your strike or sparge water with that much extra material in your mash?

Didn't brew any beer. Go a new batch of wine going and then did an overhaul on the kegerator. Did a deap cleaning and switched out a new perlick tap and shank. Only one more tap left to upgrade. I also tapped my farmhouse/wine hybrid. Interesting beverage.

nothing this weekend, but ordered the stuff for my next pale ale, which will be brewed this coming weekend.

I have a kettle that is big enough for 7 gallon batches, and I am considering buying a 2 gallon bucket to ferment small sub-batches of some brews. For example, rather than making 5 gallons of El Dorado pale ale, make 6 or 6 1/2 gallons, then put that extra in the bucket and use that small part to add other ingredients to, like fruit or oak.

Go for it.

Better bottle makes 3 or so gallon fermentors too.

I recently did 5 gallons of IPA but fermented in two different fermenters and added pineapple to one.

I don't, I know they take up a ton of room in the mash tun, but don't know how much water/heat they absorb.

Are you following the Main Grain closure announcement post on FB? It's gotten pretty ugly since Friday.

Ouch. Looks like some people got screwed, intentionally or unintentionally. Same thing happened to me at an old homebrew store in BR. I got a $50 gift certificate, then a month later the place was closed. I was told it would be redeemable if they ever opened again. This was several years ago. I think I finally trashed the certificate a few months ago.

I have a $50 gift cert to Marcello's. At least if I ever go to Lafayette I can use it (I think...)

I think I can get a bucket and top for less than $5. Should be able to come away with a half a case of bottles of small batch stuff. Will charge double what I normally charge for my beer for folks wanting those

Sounds like I need to spend that chunk of change I have to the Jackson home brew shop here shortly.

The last few batches I have brewed have been bitter. Different recipes also and I don't know what is happening.

What styles have you been brewing? Are you talking about hop bitterness or some other bitter off flavor?
