Hogs Head or Turkey Cheese Recipes?

Sorry, no recipe to offer....but just the thread title brought back vivid memories of my grandmere's "chicken cheese"! It was a jellied, cold chicken terrine much like hogshead cheese, only not quite as spicy and heavier on the parsley. She loved the stuff, and frequently made it with the leftover bits of a baked chicken, plus some additional dark meat. She didn't use gelatin, but rather boiled the legs/thighs for quite a long time & used the resulting broth that would gel on its own.
