1st recipe posted is good, but I'd add a couple bay leaves.

And a smoked ham hock. And a little thyme and basil

Never tastes the same without a Heavenly Ham or Honey Baked Ham bone.

About September I buy about 8 of them. It’s a must.

I usually just follow the recipe on the bag. I've got some cooking now and I added 2 lbs of ground meat to give it a little more arse since it's going hunting with me.

Putting hocks and sausage in it. I'll try the pickled pork next time.

I always make my own ham stock in a pressure cooker using smoked pig tails and ham hocks.

This takes it to the next level.

For some reason I can’t get this simple dish right. I’ll be attempting it again this weekend. Give me any recipe or tips you have. Thank you friends and wish me luck

If you're having trouble I'd suggest trying Camellia's Red Beans For Two.

Directions on the box are good but I'd recommend adding one cup more of water and an hour more of cooking. The seasoning packet is really good and gives you what I think is an authentic New Orleans style red bean flavor profile.

If you want to kick it up add 1 finely diced onion, half of a diced bell pepper, some crushed garlic and two pieces of smoked neckbone. Box says "For Two" but it will easily feed 4 grown arse men a large portion of beans.
