Help with a whole round roast.

So, I bought a whole round roast from Rouses. I see the eye of round and also what looks like connective tissue and tougher muscle.
How do you cook this thing? Half of it looks like an oven roast and the other half would be good for braising.
Or should I do the walk of shame back to Rouses and have the butcher cut this for me?

Take this opportunity to learn how to cut it. Have fun with it, if it’s not perfect, so what? I’m sure there’s a YouTube video.

A whole round is sometimes referred to as a Steamship Round. It can be a crowd pleaser if done right. How big we talking?

15lbs. I was hoping to make roast beef out of it and use it for debris style sandwiches this week until Christmas Eve.

Slit it and stuff with garlic. Salt and pepper all over. Put it in a roasting pan and cover with foil. Cook 3-5 hours on 400F. Pull it around 140F for rare or higher to your preference. Slice thin against the grain. Will make great sandwiches.

I use the eye of round for making beef jerky and it is excellent for that. I cut it across the grain, season it and let it marinate overnight in the fridge before dehydrating it either in my smoker or dehydrator.
Smoking it brings it to another level and is my preferred way of doing it but sometimes weather gets in the way and out comes the dehydrator.
