Help me with stuffed poblanos

I've never made any kind of stuffed pepper. Was just going to wing it from some online stuff.

Question, would it be bad to include some cream cheese in there? Like maybe the lowest layer to protect it some from the heat?

Is charing and removing the skin necessary?

Any other tips would be welcome.

this is the way that I do them. very easy. nothing fancy. cut top off poblanos, deseed. saute onion, brown off 1# chuck. add 1 can of tomato sauce(what ever you prefer) while meat is cooking, put peppers on boil to soften. when peppers are to your liking, cut slice down pepper and add meat. then top with cheese and put in oven on broil till melted. enjoy.

I use this as a low carb meal..
