Beef ribs only take about 4 hours and are

Season and cook to temp as you would brisket

Smoked beef tenderloin can be pretty amazing and fairly quick.

Agree with those saying the beef short ribs. Don't buy the little trimmed guys out in your meat section...hit up your butcher and ask for the untrimmed ribs. You're looking for the big arse dinosaur style ribs. I've gotten mine at Sam's, though I'm sure Costco sells them, as well.

Trim the meat side, use a little hot sauce as a binder for a nice thick salt and pepper rub, maybe a very thin coating of granulated garlic. Throw them in your smoker for a few hours at 250 and you're in for a real treat.

They're expensive, but worth every penny.

Seconded on the salmon. Marinade with some scotch, smoke with alder.

I didn't know what I was doing so I just cubed them and dumped into an aluminum pan then coated generously with a dry rub and stacked them in piles directly on the smoking rack all around the brisket where I could find room.

Nice thing about a smoker is as long as you can close the lid everything will cook perfectly.

After about 4 hours I took them out then coated them with some pepper jelly and a little bbq sauce and mixed then all up and put in the oven on 250 for like an hour while I got everything else ready.

Came out perfect but I can only imagine they'd be better if I knew what I was doing.

Eta I think it's almost impossible to smoke little cubes of pork belly and they not be delicious.

Thanks for all the ideas. I decided on doing a turkey. I'm doing a pre-thanksgiving run. If it comes out good, I'll be making the turkey this year.
